大陸作家葉稚珊上世紀末，在北京有幸認識一位成長於民國時期的名門閨秀。到八九十年代，琴棋書畫樣樣精通的張允和 （1909-2002），雖然已經歷了一輪又一輪的改造，住的也再不是大宅，而後巷旁的破房子，卻能“把尋常人家的生活過得儒雅、清簡，別有一番滋味。”

葉觀察到，哪怕是普通如蘿蔔、豆芽等食材，在張允和手中，也變得不尋常：豆芽 “經她一根根地掐頭去尾，數出一百七十八根，清油淡炒，來客們吃起來油鹽中都透出了所謂的閨秀滋味，這種日常的簡樸的精精緻，點點滴滴流露著幾代人才能積澱孕育出的教養、品位。”

前陣子，有個幾年前從香港移民到英國的學生，寫了一段關於她和家人週末跟其他香港人聚起來吃雞蛋仔的文字。我思考如何啟發她時，突然想起張允和與她炒的豆芽，想起雞蛋仔也同樣承載了海外港人對故鄉的思念，於是寫了以下的rewrite:

 

Student

Despite the rain we had a great day this weekend. We went to the city center to help out at a waffle store opened by a Hong Kong immigrant. We gave out waffle for people to try. Lastly, we bought some of the waffles for ourselves.

 

My rewrite

There are times when a waffle isn’t just a waffle.

For the Hong Kong diaspora in the UK, the Hong Kong-style egg waffle – distinctive for its crunchy exterior and soft, moist center – can be a stand-in for the home they’ve left behind. Partaking of this snack as a group can therefore seem like a ritual as solemn as the Lord’s Supper. Once a Hong Konger, always a Hong Konger.
